guacamole

Just in time for the Super Bowl! What is a party like in Southern New Mexico without the delicious dip that’s been a mainstay of Mexican and Mexican-American celebrations for decades? Here is the recipe to make a batch of Guacamole for your party this Sunday.

This recipe comes from the La Posta de Mesilla Cook Book written by our founder, Katy Griggs Camunez in 1971. Enjoy!

1 Large ripe avocado
1 Fresh tomato (canned tomato can be substituted)
1 Small onion chopped
1/2 tsp Salt
1 tbs Salsa de jalapeno
1/2 tsp Lime juice

Mash avocado with fork until smooth. Add lime juice and mix. Add finely chopped tomatoes, chopped onion, salt and chile sauce.

Mix well. Serve chilled on lettuce leaves with tostadas.
